Baked Sweet Potato Falafel
Sweet potatoes are available in plenty during the monsoon season. While there are many recipes that make for a tasty evening snack, here is one with a difference. Baked sweet potato falafel is easy to make and has multiple health benefits as well.
Select fresh sweet potatoes that are orange inside. Cook them at 220 degrees celsius in a pre-heated oven between 45 minutes to an hour. After cooling, peel off the potato skin and add chickpea flour and a little olive oil. To this combination, add fresh coriander leaves, garlic, cumin, and coriander seeds. Finally, add a dash of lemon, salt and pepper.
Combine all ingredients into a fine mixture, and put it in the freezer for about 30 minutes. Remove and make small balls of the paste (you can use a soup spoon for this), sprinkle them with sesame seeds, and bake in a pre-heated oven at 200 degrees Celsius for 15-20 minutes. Well-cooked falafel will usually have a mild golden brown colour at the base.
